What will you do today?
Today I will marvel at my boys' superb skills in the kitchen. At how they expertly kneaded the dough into round pizza crusts. At how Nate handled the vegetable peeler and easily grated up some carrot for his crust ('wait...did you say carrot?' Yes, he's my little dairy-free veg-head!) At how Finn managed to grate just enough cheese for his pizza pie and proudly proclaimed that he did so without 'cutting off his finger'. At the buzz of independence that was swarming around my kitchen. At the proud sense of accomplishment that was written all over their faces as they bit into their meals. What will you do today?

Happy Daddy's Day!
To one incredible man who is one incredible father! He inspires me everyday with his patience and thoughtfulness, his laid back attitude and goofy sense of humour - a fine example for our two growing boys! Happy Father's Day G and to all fathers!

Backyard foraging
Shhh! This recipe has to be our little secret. See those delicious cherries above? The ones I had to shoo the birds away from? I have a confession to make...they're not really my cherries from my cherry tree. It's really our neighbour's tree. And it hangs beautifully into our backyard. So I was thinking this morning that since it has invited itself into our yard, I would quietly steal pick a few for our supper's dessert. I mean, there's no way those greedy birds can eat that entire tree clean! And since I rarely see our neighbours in their backyard, surely they wouldn't miss a couple of cups of cherries! They went perfectly with the last of our rhubarb in this sweet and sour dessert! I love backyard foraging!
Sour Cherry Rhubarb Crisp
2 C sour cherries
3 C rhubarb
1/3 C sugar
1 tbsp. flour
a squeeze of lemon juice
Topping:
1/2 C oatmeal
1/4 C dairy-free margarine
1/2 C flour
1/2 C brown sugar
1/2 tsp. salt
Pour fruit mixture into 8x8 baking dish and sprinkle topping over the fruit. Bake at 350F for about 30 mins.
Sour Cherry Rhubarb Crisp
2 C sour cherries
3 C rhubarb
1/3 C sugar
1 tbsp. flour
a squeeze of lemon juice
Topping:
1/2 C oatmeal
1/4 C dairy-free margarine
1/2 C flour
1/2 C brown sugar
1/2 tsp. salt
Pour fruit mixture into 8x8 baking dish and sprinkle topping over the fruit. Bake at 350F for about 30 mins.

What will you do today?
Today I will not fret over the epic fail my granola bars turned out to be. Because, even though they were made on the fly with some quick improvisations made along the way, they still tasted pretty darn good. Even though they turned out to be greasy goopy goo and needed to be eaten with a spoon. That's right, a spoon. Turns out you can't top up the recommended amount of soy nut butter with maragarine. Just so you know. But when I jumped out of bed at 7 a.m. this morning and realized I had nothing to put in my kids' lunches, I didn't have time to worry about the fact that I did not have enough nut butter on hand. Quick - grab the margarine - what's the diff? Live and learn, kids, live and learn. Grab a spoon! Let's dig in!
Granola Bars
1/2 C dairy-free margarine
1/2 C soy nut butter
1/2 C brown sugar
1/2 C honey
1 tsp. vanilla extract
4 C oats
1/2 C dried fruit or chocolate chips (or both!)
Mix together margarine, soy nut butter, brown sugar, honey and vanilla. Add oats and dried fruit. Press into greased 9x13 baking dish and bake at 350F for about 20 mins. or until golden along the edges and set in the middle.
