Sunday in the kitchen

"Is it Friday yet?" Finn asked. It was only Monday, but the countdown had already begun for the weekend. "It's my lucky day on Friday," he added. Nate and G were going Cub camping for the whole weekend, and while I like to think that he was feeling lucky that he was going to have his mama all to himself for an entire weekend, deep down I knew better. It was the list of 'Fun Stuff' he had been working on all week that gave away the real reason he was feeling so lucky. As he rhymed off the list of things he had planned for us while the big boys were away, I noticed a theme developing. A food theme. A food theme featuring all of the foods he doesn't often get to eat because of Nate's food allergies. Finn and I don't often get such an extended period of alone time together, so I was more than happy to go along with the plans he had so carefully devised.
A happy day starts with a happy cookie from Tim Horton's, of course!
Off to the market, where a quick check of the 'fun' list tells us it's time for candy.
Now that we're sufficiently sugared up, what's next?
Why, a picnic at the beach, of course! 
With a favourite meal of Caesar salad (real, creamy, dairy and egg-based caesar salad!), bread and spaghetti with tomato sauce. A fresh batch of homemade tomato sauce.
Tomato and Roasted Red Pepper Sauce
3 litre basket of roma tomatoes
2 red peppers - here's a link for roasting peppers - http://allrecipes.com/HowTo/roasting-peppers/detail.aspx
1 large onion
4 cloves of garlic
A handful of fresh herbs - oregano, basil
1 tbsp of sugar
1/2 C red wine
Salt and pepper to taste
Place tomatoes in a pot of boiling water for about a minute. Using a slotted spoon, lift from water and place in ice water. Peel and set aside. Fry onions and garlic in a large stock pot until translucent. Add tomatoes, peppers, wine and seasonings. Blend together using a hand blender. Simmer for about 1 hour.
And a quick dip before the sun set on this amazing day of just me and him.
