Sunday in the kitchen

The amount of actual grass in our yard has always been far out numbered by those 'other' plants. Some might call those 'other' plants weeds. Some may judge the far-from-perfect state of our lawn. But whatever - we've never really cared much about spending time and resources maintaining grass. And besides, grass doesn't produce these beauties...
...which were turned into this goodness, Violet Jam...
...then added to these shortbread cookies!
Take your favourite shortbread recipe - I used the recipe found in 100 Best Vegan Baking Recipes, and added some lemon oil to enhance the springy flavour of the violet jam - form the dough into balls and press your thumb into the middle creating a nice little hole to place a small spoonful of jam in! Bake at 350F for about 8-10 minutes, until golden brown on the edges. Backyard deliciousness!
